Winemaking

The winemaking process begins with an overnight harvest using a machine equipped with onboard sorting to ensure the highest quality grapes. Upon arrival at the cellar, the grapes undergo additional sorting before being gently pressed in a reducing atmosphere to minimise oxidation and preserve delicate aromas. Fermentation takes place at low temperatures to retain aromatic complexity, followed by light fining and natural sedimentation for clarification. The wine is then aged for six months to develop its full character and complexity.
